Lunch on the fashionable pedestrian thoroughfare Istiklal Caddesi can be as basic as an ear of sweet corn bought from a street cart. Or you can turn yourself over to a corps of waiters eager to fetch you sautéed eggplant from the buffet -- or freshly grilled bread (called "doug").
