The new season kicks off tonight at 10 ET on the Travel Channel as Bourdain heads south of the border to Mexico with Carlos, head chef of Les Halles in New York City.

Anthony, two questions. First, in a recent episode, you said ” When grilling it’s important not to fuss around with your meat, flip it once, and check for done-ness with a finger poke.” What are you poking for in that poke? Second, WHY? haven’t you gotten the Tattoo of “COOK FREE OR DIE” yet? I cook, my wife is a tattoo artist, any reservations?......Pretty sure I can talk her into a trade, ink for dinner. We buy, you fly. Boner.

I’m looking forward to the show about the Sao Miguel in the Azores, it’s too bad that you are missing out on the other eight islands in the Azores Group. Each island has it’s own flavor to each dish. Each island also have great parties during the summer, the Festas! You have to experience them to understand them and love them.

I am searching your site for Anthony Bourdain’s programme on the Azores. I cannot find it listed. I am tentatively planning a trip to the Azores in July 2009 (a locale I missed on my earlier trips to Portugal). I would like to watch the programme. Please advise. Thx.

Anthony I hope you and your crew shot the azores episode in the summertime. For summertime is the best time to be there. All the exotic flowers are in bloom, the sun brings out the blues and greens from the volcano crater lakes, rolling green hills and cultivated fields can be seen for miles, people on the weekend barbequing on the roadside in the mountains or outside their summer cottages that are surrounded by grape vines and fig trees, cliffs covered in wild flowers slope into the calm blue sea that meets the clear blue sky at the horizon. Ah summer in the Azores. No place I’d rather be. Winter is grey and drizzly but still a beautiful place non the less. Tony enjoy our awesome Portuguese gastronomy and if you decide to go back I hope you check out the the towns of Povoacao (I have a place you can crash) and Nordeste on the eastern side of Sao Miguel. the scenery will knock your flip flops off.
