Dear Mexican, Why the Yellow Cheese on Tex-Mex Food?

imageAnyone who’s traveled much in Mexico knows you just don’t see much yellow cheese on authentic Mexican food. You’re far more likely to encounter a lighter white cheese. So why are so many Tex-Mex and California-Mex dishes north of the border—heck, throughout the world—smothered in yellow cheese? Gustavo Arellano, who writes the terrific Ask a Mexican column, explains.

You will find the white mexican cheese in quite a few Mexican style restaurants in Europe. It is far more common in Europe compred to USA. I wonder why.

I’ve noticed that many places use yellow cheese with red sauce and white cheese with green sauces.  Maybe it’s a flavor thing?

You know I really wish they would use Swiss or a sharp whit cheddar cheese!!  Or at least have the option….

mexican food is the most testy food from all over the world - agree, but if they are not adding too terrible pepper.
